I'd like to test my controlled nesco roaster for temp. Is it necessary to time the incremental increase in heat? or do i simply get to 60 degrees and maintain that temp?

How will you use this nesco roaster?  Do you put the mason jars in it?

We process Cibacron F at 60°C start, finish, end.  No change in temperature.

Yes, Donna we put the jars in the water bath.

How deep a water bath do you use? And do you use it covered or uncovered? I'm still waiting for mine to reach equilibrium... Linda

I filled so that about 1/2 of my pint jars were immersed. After lots of fooling around, i established that apprx. 360 degrees F produced the correct C temp. Uncovered was my process.

i tried covered, but the steam melted my new thermometer! : (

Okay, after my lots of fooling around too, I think I'm going to go with covered.  What I noticed when I had it uncovered was that the jars near the outside (the heating elements in the roaster are in the side) were warmer than the ones in the middle, which were difficult to get to the right temp even if I had it cranked up to over 450 degrees F!  With it covered, I got about the right temp using the gauge on the thermostat and it was even for all the jars, so I think I'm going to use that method unless some other reasons come up. 

I'm using an old Polder temperature probe (with just the wire and tip going under the cover), so that works for this method and I can watch the temp from the display outside.  

I haven't melted anything yet, but things certainly smelled hot when I had it at 475!
